This is a satisfying and nutritious one-pot wonder, that can be made in batches and frozen.
Ingredients: serves 4
2 tbsp olive oil
1 onion – peeled and diced
8 veggie or pork sausages
1 pepper (red/yellow) – deseeded and chopped
1 carrot grated
3 cloves garlic – peeled and minced
¼ tsp dried red chilli flakes
1 tsp smoked paprika
1 level tbsp chopped fresh rosemary or 2 tsp dried
50ml red wine (optional)
2x 400g tins of chopped tomatoes
1 tbsp tomato puree
100ml water
150g leafy greens
400g tin of haricot/cannellini/butter beans
A small bunch of fresh thyme or 1 tsp dried thyme
A tbsp flat leaf parsley
Method:
Heat the oil in a large frying pan. Add the onion and cook on a low heat for about 10 minutes.
Meanwhile cook the sausages in a little oil in another frying pan.
When the onion is soft turn up the heat to medium and add the carrot, pepper, chilli, paprika and rosemary and garlic. Cook for 1 minute and keep stirring to prevent it sticking.
Add the wine (if using) and continue stirring, followed by the tomatoes, tomato puree and the water.
Next add the leafy greens, beans, thyme and the cooked sausages. Give it a good stir, cover with a lid and let it simmer on a low heat for about 20 minutes. Add a little more water if needed.
Scatter the parsley over before serving. Serve with creamy mashed potatoes or pasta
