This is such a simple recipe and the ingredients can be switched for what you have to hand, making it practical as well as highly nutritious!

Method: take equal amounts of dates and almonds (or almond butter) – blitz to a thick mixture in a food processor or high powered blender (a Nutribullet works for this); roll the mixture into little balls about 3cm in diameter; then roll each ball in some desiccated coconut to make them into snowballs.

Tip: To make 12 energy balls aim to use 130g dates and 130g almond butter

Tip: The almonds can easily be switched for pecans, cashews, hazelnuts or mixed nuts.
